Grilled Salmon with Chorizo, Orange and Olive Topper

Grilled salmon is served topped with a cooked mixture of chorizo, garlic, canned tomatoes, orange peel and green olives.
Ingredients
- 1 tbsp olive oil
- 3 links fresh chorizo sausage, skinned and crumbled
- 2 cloves garlic, minced
- 4 scallions, chopped
- 1 14-oz can diced tomatoes, drained
- 2 tbsp fresh orange peel, finely sliced in 2-inch long strips
- 3 tbsp pitted green olives, chopped
- 1/2 tsp coarse salt
- 1/4 tsp fresh ground black pepper
- 4 6-oz salmon filets

Prepare topping by heating oil in a 12-inch skillet over medium heat. Add sausage, garlic and scallions. Cook and stir until sausage is browned. Drain off fat. Add tomatoes, orange peel, olives, salt and pepper. Cook on medium heat for 10 minutes. Reduce heat to low; keep warm. Meanwhile, heat a grill pan on medium heat and spray with cooking spray. Grill salmon about 8 minutes on each side or until just done. Plate salmon and add even portions of topping.
Notes: A fabulous new idea I came up with to serve one of our favorite fish-- salmon. The flavors are really outstanding.
