Grilled Salmon with Passion Fruit Sauce

Salmon filets are grilled and served with a creamy sauce flavored with passion fruit.
 

Ingredients

  • 4 pieces 12 oz salmon, skinless
  • 4 oz unsalted butter
  • 1 tbsp Dijon mustard
  • 2 egg yolk
  • 2 oz capers
  • 1/2 cup passion fruit pulp
  • 1 cup white wine
  • 2 oz shallots, small dice
  • Salt to taste

Method

Season salmon with salt. Grill just one side then set aside. Place shallots in saute pan with 1/2 cup white wine and passion pulp; reduce to 1/8 cup on very low heat. When it's reduced, strain and reserve liquid. Place butter in pan to brown on very low heat for about 3 minutes. When butter start to change color, remove from heat and set aside. Whisk egg yolks in a bowl and add mustard. Whisk for about 1 minute. Add butter slowly to make an emulsion. Add reduced passion fruit, capers and wine, whisking. Season with salt. Add salmon and remaining white wine; put in oven at 350 degrees for about 5 minutes, just to finish cooking. Serve with the sauce. Dish goes good with white rice or mashed potatoes and roasted vegetables.
