Grilled Shrimp and Ole Salsa

Easy to make, healthy grilled shrimp served with a fresh fruit salsa with mango and pineapple.
Ingredients
- 12 ounces uncooked shrimp, tails on, thawed
- Salsa:
- 1/4 cup fresh squeezed lime juice
- 2 tablespoons honey
- 1 teaspoon fresh grated ginger
- 1/8 teaspoon salt
- 2 tablespoons fresh cilantro, chopped
- 1/4 cup green bell pepper, chopped
- 1/4 cup red onion, chopped
- 2 mangos, pitted, peeled and cubed
- 1 cup fresh pineapple, chopped

Coat a grill rack with nonstick cooking spray. Heat grill to medium over indirect heat. Place shrimp on grill for 2 to 3 minutes. Turn shrimp over and cook an additional 2 to 3 minutes or until shrimp begin to turn pink and have cooked through. To prepare salsa, whisk together first 5 salsa ingredients in a medium bowl. Gently stir in all remaining ingredients until well combined. Place hot shrimp on a large serving platter and spoon salsa over the top.
Notes: This is an easy to make recipe with the taste of Mexico. It's also "figure friendly" and a healthy alternative to many standard Mexican dishes.
