Grilled Watermelon and Cheese Salad

Herb marinated shrimp, chickpeas, slices of watermelon, and halloumi cheese are grilled and served on mesclun greens.
 

Ingredients

  • 1 pound extra large shrimp, cleaned
  • 2 tablespoons extra virgin olive oil
  • 2 lemons
  • Salt & Pepper
  • 1/4 cup fresh chopped oregano, divided
  • 1/2 cup fresh chopped mint, divided
  • Wooden skewers soaked in water for 30 minutes
  • 1 cup canned or cooked chickpeas
  • 8 ounces halloumi cheese, sliced 1/4-1/2" thick
  • 4 large slices watermelon, each about 1 inch thick
  • 12 ounces mesclun salad greens
  • 16 kalamata olives, pitted

Method

Mix shrimp, juice from 1 lemon, 1 tablespoon olive oil, salt, pepper, and 1/2 of the oregano and mint. Marinate for 30 minutes. Skewer shrimp, on 4 skewers. Heat grill to medium-high. Place shrimp skewers onto grill. Turn after 2 minutes and grill until cooked, about 2 minutes other side. Place chickpeas in foil pan and grill for 6-7 minutes. Add salt to watermelon. Brush remaining olive oil onto watermelon and halloumi cheese slices. Place watermelon and cheese on grill. Grill 2-3 minutes on each side. Remove from grill. Cut watermelon into cubes. Place mesclun on 4 dinner plates. Add salt, pepper, remaining oregano and mint to salad. Drizzle with a little additional olive oil. Top with grilled chickpeas, watermelon, cheese, olives and shrimp skewer. Squeeze 1/4 lemon onto each salad.

 

Notes: Halloumi is a cheese native to Cyprus. It is ideal for grilling because it does not melt easily.
