Jumbo shrimp are flavored with Jamaican jerk seasoning, then threaded on skewers with plantain slices, and grilled.
Toss shrimp with jerk seasoning; place in refrigerator for 30 minutes. Peel the ripe plantain and cut in thick slices. Thread shrimp and plantain slices onto skewers. Brush with olive oil and grill about 3 minutes on each side, or until done.
