Grilled Orange-Bourbon Salmon


Salmon fillets for 2 are marinated in a sweetened lemon and bourbon mixture, grilled, and topped with a thickened orange juice sauce.



Ingredients:

  • 2 salmon fillets (about 7-8 oz each)
  • For the Marinade:
  • 1/4 cup fresh lemon juice
  • 2 Tablespoons bourbon whiskey
  • 1/4 cup brown sugar
  • 1 clove garlic, minced
  • For The Sauce:
  • 1/4 cup fresh-squeezed orange juice
  • 3/4 teaspoon cornstarch, mixed with 1 Tablespoon cold water
  • 1 teaspoon bourbon whiskey
  • 1 Tablespoon (unsalted) butter
  • 2 teaspoons brown sugar

Method

In a zipper-lock plastic bag, combine marinade ingredients: lemon juice, bourbon, brown sugar and garlic, and add the salmon fillets. Marinate in the refrigerator for 4 hours. Later, while grill is heating up, combine the sauce ingredients: orange juice, cornstarch/water mixture, bourbon, butter and brown sugar in a small saucepan; stir over medium heat until mixture thickens slightly and bubbles. Set aside. Take salmon from the refrigerator, discarding marinade, and grill until fish flakes easily with a fork, approximately 10-20 minutes, depending on the thickness of the fillets. Serve grilled salmon topped with the sauce.

Notes: This is fast and easy for summer cooking, and partners well with roasted new potatoes and a big green salad. The salmon fillets can also be sauteed in a skillet in an oil/butter mixture, if you like.
