Grilled Salmon with Mango Salsa


Grilling salmon on a cedar plank infuses it with incredible flavor--but no extra calories. Serve with fresh mango salsa.



Ingredients:

  • 1.5 to 2 lb salmon filet
  • 2 mangos, diced
  • 1 bunch cilantro, finely chopped
  • 1 red onion, finely chopped
  • Juice from 2 limes (about 3-4 Tbsp)

Method

Grill salmon, preferably on a cedar shingle. Mix salsa ingredients together; serve with grilled salmon.

Notes: Recipe can be cut in half for a smaller crowd.

Number of servings: Serves 6-8
