Shrimp with Habanero Pasta


Sauteed shrimp tops this spicy habanera pepper-sauced pasta. Citrus juices also flavor the sauce.



Ingredients:

  • 16 ounces dried fettuccini
  • 1/4 cup olive oil
  • 20 large shrimp, peeled and deviened
  • 1 yellow onion, diced
  • 1 red sweet pepper, diced
  • 2 medium bananas, sliced
  • 1/2 cup pineapple juice
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup minced, seeded, habanero chiles
  • 2 teaspoons butter or margarine
  • 1/4 cup grated Parmesan cheese

Method

In a large pot cook fettuccini until al dente, approximately 10 minutes; drain. Meanwhile, in large saucepan, heat oil and saute shrimp, onion and sweet pepper for 5 minutes or until shrimp turn opaque. Remove shrimp and set aside, leaving onion and pepper in skillet. Add banana slices and juices; simmer, uncovered, over medium heat until bananas are softened. Remove from heat and stir in cilantro, habaneras, butter and Parmesan cheese. Stir this sauce well into the drained fettuccini. Place pasta mixture onto individual plates and top each serving with 5 shrimp. Sprinkle with additional Parmesan, if desired.
