Grown and Sexy Cajun Shrimp Mac and Cheese

This casserole contains macaroni, shrimp, three cheeses, wine, cream, butter, roasted garlic, Cajun seasoning, plantain, tomatoes, and onion soup mix, topped with crumbs.
 

Ingredients

  • 1 garlic head
  • 1 lb macaroni
  • 3 tbsp olive oil
  • 1 plantain
  • 1 medium onion or shallot
  • 2 lbs shrimp, peeled and deveined
  • 1/2 cup dry white wine
  • 2 sticks (1 cup) butter
  • 1/2 cup heavy whipping cream
  • 12 oz. shredded cheddar cheese (3 cups)
  • 12 oz. shredded pepper-jack cheese (3 cups)
  • 4 oz. grated Parmesan cheese (1 cup)
  • 1 pkg onion soup mix
  • 1 tbsp flour
  • 2 eggs, beaten
  • Nutmeg, to taste
  • 2 tbsp Cajun seasoning
  • 1 to 2 cups Roma tomatoes, halved
  • 1/2 cup garlic-seasoned bread crumbs

Method

Cut off tip of garlic cloves; wrap the head of garlic in foil, drizzled with a small amount of oil. Roast in a 350 degree oven for 45 minutes until very tender; set aside to cool. Boil macaroni in salted water with olive oil; drain, but do not rinse. Cook plantain; dry on paper towels. In a large saucepan, saute onions, then add shrimp. When shrimp are done, stir in white wine. Add half of the butter and the heavy cream; remove from heat. Add shredded cheeses, but only half of the Parmesan. Squeeze out garlic paste from roasted garlic; stir into shrimp mixture. Stir in onion soup mix, flour, eggs, nutmeg, and Cajun seasoning. Cube plantains and add to mixture along with tomatoes. Topping: Mix bread crumbs, butter and remaining Parmesan cheese in a saucepan. Spread on top of dish and bake at 350 degrees for 45 minutes.
