Guava Tuna Raisin Melts

A combination of canned tuna, cucumber, green onion, celery, pickle, napa cabbage, and shredded cheeses is combined with a sour cream-yogurt-guava jam dressing. This mixture is piled atop raisin English muffins, and broiled.
Ingredients
- 4 raisin English muffins, split in half to make 8 pieces
- 4 cans albacore tuna, drained
- 1 cup English cucumber, diced
- 1/2 cup green onion, diced
- 1/2 cup celery, diced
- 1 large dill pickle, chopped
- 2 cups napa cabbage, shredded
- 1 cup cheddar cheese, shredded
- 1 cup hot pepper cheese, shredded
- DRESSING:
- 1/2 cup plain yogurt
- 1/2 cup sour cream
- 1 tbsp. lemon juice
- 2 tsp. soy sauce
- 1 tsp. toasted sesame oil
- 1/4 cup guava jam
- Garnish with more cheese

Method
Mix tuna and all the veggies in a large bowl. Mix dressing ingredients in a separate bowl. Preheat broiler; place split muffins, cut side up, on sheet pan. Add dressing to veggies and toss well to coat. (Hands work best.) Place enough topping on each muffin to cover, yet keep its form; pile high. Broil about 6 inches from heat until slightly browned. Be careful; it will burn quickly. Plate, garnish and serve with your favorite soup.
Notes: This may sound like a long process but really not. Mixture can be made a day ahead. Also a great summer sandwich done on the BBQ, served with Gazpacho.
