Haddock with Zip

The "zip" in this easy fish recipe is a creamy topping of mayonnaise, Parmesan cheese, and horseradish.
 

Ingredients

  • 1 tsp. prepared horseradish
  • 1/3 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 1/2- to 3/4-lb. haddock fillet
  • 1 tsp. butter

Method

Preheat oven to 425 degrees. Combine horseradish, mayonnaise, and Parmesan cheese; set aside. Place butter in a shallow baking dish. Place dish in oven just until butter melts. Place haddock in dish. Spread mayonnaise mixture evenly over haddock. Bake about 20 minutes or until fish is done.

 

Notes: Quick and easy recipe - 'no-brainer' when time is of the essence. Serve with a healthy green salad or rice pilaf and green peas as side dishes.
