Halibut with Spinach Tomato and Garlic Hash

This fresh and healthy halibut dish makes a great meal and is perfect for entertaining guests.
Ingredients
- 6 tablespoons olive oil
- 2 tablespoons house seasoning (3 tablespoons each black pepper, paprika, Cajun seasoning, garlic powder)
- 4 6oz halibut steaks
- 2 1/4 teaspoons salt
- 1 teaspoon fresh ground black pepper
- 2 teaspoons fresh garlic, chopped
- 1 pint cherry tomatoes, halved
- 1 bag pre-washed fresh spinach or 2 packages frozen spinach, thawed and squeezed of excess water
- 1/4 cup low sodium chicken broth
- 3 tablespoons butter

In a large Ziploc bag, combine halibut, 2 tablespoons olive oil, 1 teaspoon salt and house seasoning. Refrigerate for four hours. Preheat oven to 400 degrees F. In a large oven proof saute pan, heat 2 tablespoons of olive oil over medium high heat until it ripples. Add halibut and cook for three minutes in first side, flip and finish cooking in oven for an additional 6 minutes. Remove fish from pan and tent with foil to keep warm. In same pan over medium heat, add remaining two tablespoons of olive oil and garlic. Saute 3 minutes. Add tomatoes, spinach, and remaining 1 1/4 teaspoons salt and 1 teaspoon pepper. Cook for 5 minutes, add chicken broth and simmer another 6-8 minutes, until tomatoes have popped open and spinach has wilted. Decrease heat to low and add butter. Stir until slightly thickened, about 3 minutes. Place hash on 4 plates and top with fish. Spoon sauce over fish and sprinkle with additional salt and pepper.
