Halibut Lasagna


This baked lasagna is made with chicken broth, cream, lots of cheese and halibut which is a very mild and tender fish.



Ingredients:

  • 6 Tbsp butter
  • 1-1/2 pounds halibut, divided into 1" pieces
  • 3-4 cloves garlic, minced
  • 3/4 tsp lemon thyme
  • 3/4 tsp fresh basil, chopped
  • 3/4 tsp fresh oregano, chopped
  • 2/3 cup flour
  • 1 tsp salt
  • 3 cup chicken broth
  • 1 cup heavy whipping cream
  • 8 oz lasagna pasta, cooked, drained
  • 2 cup shredded Italian cheese
  • 1/2 cup Parmesian cheese

Method

Melt 3 Tbsp butter in skillet. Add halibut, garlic, thyme, basil and oregano. Cook until fish flakes easily and turns white. Remove from heat and set aside. Add remaining butter to saucepan. Stir in flour and salt until smooth. Cook and stir until golden brown. Gradually add broth and whipping cream, bring to boil, stirring about 2 minutes or until thickened. In greased 13 x 9 x 2 baking dish layer half of the pasta, halibut, white sauce and cheeses. Repeat layer. Cover with foil and bake at 350 degrees for 20 minutes. Remove foil and bake an additional 20 minutes, or until bubbly.
