
This recipe contains the oysters and their liquor, vegetables (celery, potato, green onion and mushrooms) plus evaporated milk and the secret ingredient--catsup.
Place celery, potato, and butter in small stock pot. Saute for 5 minutes on medium. Add water and salt, and simmer on medium heat until celery and potato are tender, about 10-15 minutes.
While celery and potato are cooking, slice oysters in thirds. Place oysters and their liquor (liquid) in a small saucepan; simmer on low about 4-5 minutes, or until edges curl. Add oysters and their cooking liquid, green onions, and mushrooms to celery and potato mixture and bring to simmer (about 5 minutes.) Add catsup and evaporated milk to stew, and remove from heat. Let sit for 10 minutes for flavors to infuse together.

This recipe was handed down to me from my Sicilian grandpa. The catsup is an essential, yet secret ingredient. If you like oysters, but have never tried oyster stew, this one will make you a believer.
