Wonton wrappers are baked until crisp, then filled with lobster, avocado, shallots and tomato.

24 Wonton Wrappers
1 Ripe Avocado
1× 3 oz pkg Cream Cheese, softened
½ cup Mayonnaise
3 Tbsp Finely Chopped Shallot
3 Tbsp Minced Fresh Italian Parsley
1 tsp Finely Grated Lime Zest
2 Tbsp Fresh Lime Juice
1 tsp Old Bay Seasoning
12 oz Cooked Lobster Meat, chopped
6 Cherry Tomatoes, quartered
3 Tbsp Snipped Chives


Preheat oven to 350 degrees. Spray 24 2 1/2 inch muffin cups with cooking spray. Press a won ton wrapper into each and bake 8-10 minutes, until golden brown. Remove cups from tins and cool on a wire rack. In a medium mixing bowl, mash the avocado with a fork, then whisk in the cream cheese until smooth. Stir in the mayonnaise, shallots, parsley, lime zest, juice and Old Bay seasoning. Fold in lobster. Spoon filling evenly into the baked cups. Top each with a tomato piece and chives.
