|1× 3 oz pkg||Cream Cheese, softened|
|3 Tbsp||Finely Chopped Shallot|
|3 Tbsp||Minced Fresh Italian Parsley|
|1 tsp||Finely Grated Lime Zest|
|2 Tbsp||Fresh Lime Juice|
|1 tsp||Old Bay Seasoning|
|12 oz||Cooked Lobster Meat, chopped|
|6||Cherry Tomatoes, quartered|
|3 Tbsp||Snipped Chives|
Preheat oven to 350 degrees. Spray 24 2 1/2 inch muffin cups with cooking spray. Press a won ton wrapper into each and bake 8-10 minutes, until golden brown. Remove cups from tins and cool on a wire rack. In a medium mixing bowl, mash the avocado with a fork, then whisk in the cream cheese until smooth. Stir in the mayonnaise, shallots, parsley, lime zest, juice and Old Bay seasoning. Fold in lobster. Spoon filling evenly into the baked cups. Top each with a tomato piece and chives.
Vary this recipe by using other types of seafood and phyllo or puff pastry.
