
Large sea scallops are cooked and seasoned with lemon, honey, and curry powder, then sprinkled with a mixture of peanuts, coconut and cumin.
Melt butter in saute pan. Add scallops and cook until just done, 3 to 4 minutes per side. Remove scallops from pan. Add lemon juice, honey, and curry powder to pan. Cook until slightly thickened. Add scallops back to pan; heat through. Mix together nuts, coconut, and cumin; put scallops on a plate and top with nut mixture.
