Hot and Spicy Salmon Cakes

Jalapeno peppers and hot sauce spice up traditional salmon patties. Makes a great hot or cold appetizer.
Ingredients
- 16 oz can pink salmon
- 1/2 cup Quaker Oats oatmeal
- 1 large egg
- 1 tsp prepared horseradish
- 1 small red onion, diced
- 5-8 diced jalapeno rings, pickled
- 1 Tbsp mustard
- 1 Tbsp Habenero hot sauce or any hot sauce
- 1 tsp lemon juice
- 1 tsp chopped parsley
- Salt
- Black pepper
- Garlic powder

Method
Open and thoroughly drain canned salmon. In a large mixing bowl combine salmon, oatmeal, egg, horseradish, onion, jalapeno, parsley, and mustard. Mix thoroughly by hand. Add salt, pepper, and garlic powder to taste and mix. Shape into small patties approximately 1/2 inch in diameter. Fry in a preheated skillet in vegetable oil or spray until golden brown. Serve warm or cold with cocktail sauce.
