Hot Soup for a Cold Day

This oyster soup contains potatoes, onions, green bell pepper, and pieces of salt pork in a liquid with whole milk and vegetable broth.
Ingredients
- 1/2 lb. salt pork
- 12 oysters with their liquor
- 1 c. chopped onions
- 1/2 c. chopped green bell pepper
- 4 large potatoes, cut into 1/2" dice
- 2 c. whole milk, scalded
- 2 c. vegetable broth
- Salt to taste
- 1/2 tsp. ground white pepper, or to taste
- 2 tbsp. butter

Method
Cut salt pork into 1/2" dice and brown in a soup pan. Add onions and peppers to pan and cook about 5 minutes. Drain off excess fat. Add potatoes, salt, pepper and vegetable broth; simmer until potatoes are nearly tender, about 5 minutes. Add oysters and their liquor and the hot milk; continue to simmer about 10 more minutes.
Notes: This is a hearty soup which easily serves as a main dish. I salt only to taste because how much salt is needed depends on how salty the pork is. Great served with hot cornbread.
