|½ lb||Salt Pork|
|12||Oysters With Their Liquor|
|1 cup||Chopped Onions|
|½ cup||Chopped Green Bell Pepper|
|4||Large Potatoes, cut into ½" dice|
|2 cup||Whole Milk, scalded|
|2 cup||Vegetable Broth|
|Salt, to taste|
|½ tsp||Ground White Pepper, or to taste|
Cut salt pork into 1/2" dice and brown in a soup pan. Add onions and peppers to pan and cook about 5 minutes. Drain off excess fat. Add potatoes, salt, pepper and vegetable broth; simmer until potatoes are nearly tender, about 5 minutes. Add oysters and their liquor and the hot milk; continue to simmer about 10 more minutes.
This is a hearty soup which easily serves as a main dish. I salt only to taste because how much salt is needed depends on how salty the pork is. Great served with hot cornbread.
