Island-Style Tuna Salad


Canned tuna is combined with macaroni, cucumber, carrots, celery, green onion, roasted peppers & black olives, and tossed with 1000 Island dressing.



Ingredients:

  • 8 oz elbow macaroni, cooked according to package directions and drained
  • 1 7 oz can tuna (water-packed), well drained
  • 1/2 cup cucumber, peeled and diced
  • 1/2 cup carrots, shredded
  • 1/3 cup celery, diced
  • 1/3 cup green onions, thinly sliced
  • 1/4 cup jarred roasted red bell peppers, drained and chopped
  • 1/4 cup sliced black olives, well drained
  • 1 cup fat-free Thousand Island salad dressing
  • Lettuce

Method

In a large bowl, lightly toss together all ingredients except dressing. Pour dressing over top and toss gently. Cover and chill for 2-3 hours before serving. Serve on a bed of lettuce leaves.

Notes: This beautiful salad is full of flavor, but low in fat and calories. It makes the perfect summer lunch.
