Kamaaina Shrimp Coconut Curry

A sweet and spicy dish using any type of meat you wish.
 

Ingredients

  • 1 medium onion, chopped
  • 1/4 cup butter
  • 5 T flour
  • 1 1/2 T curry powder
  • 1 1/2 t brown sugar
  • 2 cloves minced garlic
  • 1/2 t ground ginger
  • 1 cup chicken or beef stock
  • 2 cups coconut milk
  • 1 1/2 t salt
  • 2 cups cooked shellfish, chicken, or meat cubed.

Method

Saute onion in butter over medium heat. Stir in flour, curry powder, brown sugar, garlic, and ginger. Cover and cook 1 hour over very low heat. Blend in stock and coconut milk, stirring until smooth. Do not let sauce boil. Cover; cook 1 hour longer. Add salt and shellfish; heat thoroughly. Serve with hot rice, chopped green onions, and chopped peanuts.

 

Notes: For a Luau for 20 people, increase recipe by 4.
