Karen's Shrimp Mozambique

Spicy and heavily seasoned shrimp--great served over rice or with Portuguese rolls.
Ingredients
- 1-pound medium-large shrimp (shelled)
- 4 packets Goya Seasoning (Sazon Goya con azafran)
- 1 stick butter
- 1 cup red wine
- 6-7 teaspoons chopped garlic
- 1-2 Tablespoons lemon juice
- 1 cup water
- 1 teaspoon onion powder
- 1 Tablespoon fresh chopped parsley
- 1/2 teaspoon crushed Red pepper flakes (or to taste)
- Red hot pepper sauce (to taste)

Method
Add water and butter to a saucepan and simmer on low until butter melts. Add Goya seasoning, garlic, salt, pepper, red pepper flakes and onion powder. Stir and simmer on low for 3-4 minutes. Add shrimp and wine, stir, then turn up the heat. When the sauce just begins to boil, lower heat, cover and simmer on very low for 4-5 minutes, stirring occasionally. Add lemon juice, parsley, and hot sauce to taste. Stir, cover and simmer on very low 4-5 minutes. (At this point I tweak the flavors adding either extra hot sauce or garlic.) Spoon shrimp and sauce into bowls and serve with Portuguese rolls on the side for dipping.
Notes: Also delicious served over white rice for a main course. Sazon Goya con azafran is a Cuban seasoning ingredient. Look for it in specialty stores or order via the internet. Portuguese rolls can also be found on the internet or specialty stores.
