Lime & Coconut-Curried Shrimp


This recipe is easily replaced with chicken, fish or even vegetables for a vegetarian dish. It is quick, easy, and healthy.



Ingredients:

  • 2 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced (fresh or bottled)
  • 1 cup sliced red bell pepper
  • 1 (14-ounce) can light coconut milk
  • 2 tsp curry powder
  • 1/2 tsp chili paste
  • 1 cup frozen peas
  • 1lb shrimp, peeled and deveined
  • 1/4 cup scallions
  • Juice of one lime
  • 3 cups cooked brown basmati rice

Method

Heat oil in a large non-stick skillet over medium heat. Add garlic and ginger and saute for 1 minute. Add bell pepper and saute about 2 minutes. Add coconut milk, curry powder, and chili paste, and simmer for about 5 minutes. Add peas and shrimp, reduce heat to low and simmer lightly until shrimp are pink and cooked through, about 5-10 minutes. Add lime juice and scallions. Remove from heat and serve over hot rice.

Notes: This is the recipe I make when I want lots of flavor and nutrition with very little effort. It's a cinch to prepare, it's healthy and it's packed with color and flavor. This recipe works well with fish, chicken, and just about any kind of vegetable, making it a great way to use up things you have on hand. It's also a great way to get kids to eat their vegetables!
