Lobster Roll from Four Seasons Boston

Lemon "sabayon":
½ cup Creme Fraiche
¼ cup Mayonnaise
1 tsp Lemon Zest
2 Tbsp Lemon Juice
Salt & Pepper, to taste
Lobster Roll:
1 Tbsp Butter, softened
1 Small Clove Garlic, minced
1 Each Split Top Bun
1 lb Chopped Lobster
1 Tbsp Each Carrot, celery, onion - small dice
2 Piece Bibb Lettuce
Lemon Wedges


In a medium bowl, whisk together creme fraiche and mayonnaise. Fold in zest, juice, salt and pepper. Set aside.

Combine softened butter and garlic. Spread on bun and toast in oven until lightly golden.

In a medium bowl, combine lobster, vegetables and lemon sabayon. Season with salt and pepper, to taste.

Once bun is lightly toasted, stuff with Bibb lettuce and top it with lobster mixture. Garnish with claw and lemon wedge.
