Lowfat Crab Linguini

Imitation crab is added to a sauce consisting of cream of mushroom soup, nonfat sour cream, canned mushrooms, and Parmesan cheese. Serve over hot cooked pasta for a delicious meal.
 

Ingredients

  • 1 10 3/4-oz. can reduced-fat condensed cream of mushroom soup
  • 3/4 cup nonfat sour cream
  • 1 4-oz. can sliced mushrooms, drained
  • 3 oz grated Parmesean cheese
  • 1 1/2 tsp. minced garlic
  • 1/2 lb imitation crabmeat
  • Fat-free or 1% milk to thin (about 1/2 cup)
  • 1 16-oz. pkg. linguini pasta, cooked and drained

Method

Combine in a saucepan: soup, sour cream, mushrooms and cheese. In a skillet, saute garlic in 1 TBSP olive oil. When lightly brown, add crab and cook and stir for 1 minute. Add to saucepan and heat on low, stirring occasionally to keep from scorching. When Parmesan is melted and mixture is creamy, add just enough milk to thin. Heat through; spoon sauce over pasta and enjoy.

 

Notes: If you don't like mushrooms, you can use cream of celery soup and leave the mushrooms out.
