Mango Peach Glazed Halibut

This dish is great for impressing guests and serving a healthy dinner. The mango peach glaze really matches the fresh white fish.
 

Ingredients

  • 16 oz mango peach soda
  • 1 8 oz Alaskan halibut
  • 1 oz bacon
  • 3 oz apples, julienne
  • 2 oz yams, diced
  • 1 oz white wine
  • 1 tsp garlic
  • Salt and pepper to taste

Method

In a small saucepan, add soda and reduce to a syrup consistency. Season halibut and place into a 300 degree oven for 7-10 minutes. Glaze halibut every 2 minutes. In a saute pan, add bacon and render. Add yams and saute until yams observe all fat from bacon. Deglaze with wine and add garlic and apples. Saute for an additional 3 minutes. Place mixture in center of plate and place halibut on top of mixture. Give halibut one last glaze with syrup and drizzle syrup around plate.
