Marinated Salmon Steak

Salmon steaks are marinated in a mixture of orange and lime juice, vinegar, garlic, and cilantro, then broiled or grilled.
 

Ingredients

  • 1 Tbsp White Wine Vinegar
  • 1 cup orange juice
  • 1/4 cup lime juice
  • 4 cloves miced garlic
  • 1/4 cup olive oil
  • 1/4 cup chopped cilantro
  • Salt (to taste)
  • Freshly ground Black pepper (to taste)
  • 4 salmon steaks, about 1-inch thick (6 to 8 oz. each)

Method

Combine vinegar, orange juice, lime juice and garlic. Whisk in olive oil. Stir in cilantro, salt and pepper. Place salmon steaks in glass dish. Set aside 4 tablespoons of the liquid mixture. Pour remainder over salmon and marinate 60 minutes in refrigerator, turning once. Lift steaks from the liquid mixture and discard this mixture. Preheat broiler. Broil the steaks until cooked thru, 5 to 6 minutes per side. Drizzle 1 Tbsp. of the reserved marinade over each steak.

 

Notes: This dish is also great prepared on the grill.
