Mediterranean Tuna Salad

Feta, kalamata olives, cucumbers, tomatoes and spinach flavor this tuna perfectly. The lemon basil mayonnaise also adds a flavorful punch.
Ingredients
- 2 6 ounces solid pack white tuna, drained
- 2 cups baby spinach leaves, rough chopped
- 1 cup diced cucumber, peeled and seeded
- 1 cup diced tomato, seeded
- 1/2 cup diced kalamata olives
- 8 ounces feta cheese, crumbled
- 1/2 teaspoon cumin
- Salt to taste
- Ground black pepper to taste
- Whole grain bread
- Lemon basil mayonnaise, recipe follows
- Lemon Basil Mayonnaise:
- 1 cup mayonnaise
- 1/4 cup packed basil leaves
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice

Method
Mix together tuna, spinach, cucumber, tomato, olives, feta, salt, pepper and cumin until well blended. Taste and adjust seasonings. Spread one side of wheat bread with basil mayonnaise, top with tuna mixture, then top with other slice of bread. Or serve on a bed of mixed spring greens, topped with a dollop of basil mayonnaise. Lemon Basil Mayonnaise: Place all ingredients in a blender, or small food processor and pulse until well blended.
