Mediterranean Tuna with Spinach Orzo

This light and fresh meal is simple to prepare and will blow you away with all of its flavor. The orzo is perfect with the addition of the spinich and feta cheese.
Ingredients
- 1 14 1/2 oz can fat free, reduced sodium chicken broth, plus 1/2 cup water
- 1 cup uncooked orzo
- 1 10 oz bag ready to serve baby spinach
- 2 ounces Mediterranean feta cheese crumbles with basil, black olives and sundried tomato
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon olive oil, divided
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 pouch microwaveable tomato and olive pasta sauce
- 1 7 oz can small artichokes, drained and coarsely chopped
- 1 tablespoon drained capers
- 2 teaspoons Greek seasoning, divided
- 1 1/2 teaspoon chopped fresh oregano or 1/2 teaspoon dried oregano leaves
- 4 6 oz tuna steaks, cut about 1 inch thick

Method
Bring chicken broth and water to boil in saucepan then add orzo. Cook over medium low heat, with lid ajar for 8 minutes, stirring occasionally. Stir in spinach, cheese and black pepper. Cover tightly then set off heat and let stand 10 minutes. Heat oven to 450 degrees. While orzo is cooking, coat a medium saucepan with olive oil flavored cooking spray. Add 1 1/2 teaspoons oil and heat over medium high heat. Add onion and green pepper, saute 3 minutes until onion is translucent. Cut off end of pasta sauce pouch and pour into skillet along with next 5 ingredients then bring to a boil. Reduce heat and simmer 5 minutes to blend flavors. Set aside and keep warm. Coat a large non stick ovenproof skillet with cooking spray. Add remaining 1 1/2 teaspoons oil and heat over high heat. Sprinkle tuna with 1 teaspoon Greek seasoning. Place in skillet and cook 2 minutes without disturbing. Turn tuna and spoon sauce over evenly. Place in hot oven and cook 6-8 minutes until desired degree of doneness. Place spinach orzo on large serving platter and top with tuna.
