Microwave Fish Dinner

Fish fillets are placed in a microwave-safe dish, sprinkled with shredded carrot, snow peas, and lemon peel and juice, topped with butter and dillweed, and then micro-cooked until done.
Ingredients
- 3 fish fillets (5 oz. each), 1/2-inch thick
- 1 cup shredded carrots
- 1/4 pound fresh snow peas
- 2 tsp. grated lemon peel
- 2 Tbsp. lemon juice
- 2 Tbsp. margarine, cut up
- 1/4 tsp. dried dillweed

Method
Cut each fillet in half. Place fish in a 13x9-inch microwave-safe baking dish, with thicker portions of fish towards outside of dish. Sprinkle fish with shredded carrots, snow peas, lemon peel and juice. Top with margarine and dillweed. Cover with plastic wrap, turning back one edge to vent. Microwave on HIGH until fish flakes easily when tested with a fork, about 5 to 6 minutes, turning dish once. Let stand one minute before serving with slotted spoon.
