No Can Tuna Salad

Fresh tuna combines with cucumbers, scallions, cilantro in a flavorful wasabi dressing. A great dinner salad.
 

Ingredients

  • 1 lb albacore tuna steaks
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cucumber, peeled and seeded
  • 3 scallions
  • 4 Tbsp wasabi mustard
  • 1/3 cup mayonnaise
  • 3 Tbsp fresh cilantro, chopped
  • 4-6 butter lettuce leaves
  • 2 Tbsp sesame seeds

Method

Pre-heat oven to 375 degrees. Brush tuna with oil and sprinkle with salt and pepper. Roast for 10-12 minutes until cooked through. While tuna is cooking, dice cucumber and scallions. Place cooled tuna in a bowl and flake in to large chunks with a fork. Toss tuna with cucumber, scallions, mustard, mayonnaise and cilantro. Serve in butter lettuce leaves and garnish with sesame seeds.
