This classic seafood stew gets its sweet and creamy texture from a non-dairy coffee creamer--a nice contrast to Worcestershire sauce and cayenne pepper.

  • Servings: 2-3

1-2 Tbsp Olive Oil
½ cup Chopped Onions
1 stalk Celery
1 tsp Dried Thyme
1 tsp Worcestershire Sauce
½ tsp Cayenne Pepper
1 jar Oysters With Juice
3 cups Non-dairy Coffee Creamer
3-4 Smoked Oysters, chopped
1 Tbsp Butter
Salt & Pepper, to taste

Saute onion and celery in oil until tender crisp. Add thyme and mix together. Add oysters, juice, Worcestershire sauce and cayenne, then mix together. Add nondairy creamer, smoked oysters, butter, salt and pepper then heat and taste to adjust seasonings.

Helpful Tips:

The coffee creamer is a little sweet, but with the cayenne, it's a nice contrast. Also, the tender-crisp celery gives this dish a nice texture. Serve with crusty 7 grain rolls.
