Octopus Stew

Octopus is cut into small pieces and cooked with potatoes, onion, beer, tomato sauce and water. It's served as a stew or with cooked rice.
Ingredients
- 1 octopus cut into small pieces
- 6 medium potatoes, diced
- 1 medium onion, cut into small pieces
- 2 garlic cloves, cut into small pieces
- 1 12 oz can or bottle of beer
- 6 cups of water
- 2 Tbsp of tomato sauce
- 2 tsp of olive oil
- Salt and pepper to taste

Method
In a cooking pot, add the olive oil; when oil is a little hot add the garlic until it turns into a golden color, then add the onion and parsley. When onion turns to a golden color add salt, pepper and tomato sauce. Add the beer and water. Bring it to a boil and add the octopus, when the octopus is cooked, add the potatoes and let it cook. When potatoes cooked remove from heat. Let it sit at least 45 minutes after it is cooked. Serve as a stew or with white rice.
