Use this salmon recipe to give your family a healthy dose of Omega 3. These salmon cakes are great when served with this red pepper sauce.
Heat one tbsp olive oil in medium size skillet and saute green onion, red pepper and garlic for about 1 1/2 minutes. Cool and add basil, cilantro, beaten eggs, 3/4 cups bread crumbs, sockeye salmon and Dijon mustard. Mix together and mold into salmon patties. Combine rest of breadcrumbs (1/2 cup) with Parmesan cheese. Roll salmon patties in breadcrumb Parmesan cheese mixture. Chill at least one hour. Combine 2 tbsp olive oil and butter in a large frying pan. Cook salmon cakes over moderate heat for about 3-4 minutes each side until browned. Serve with red pepper sauce.
Red Pepper sauce:
Heat olive oil in pan over medium heat. Add red peppers and basil, stirring constantly. Saute for about 1 1/2 minutes. Put all of the ingredients in a blender and puree.
Chill overnight.
