Omega 3 Salmon Cakes with Red Pepper Sauce


Use this salmon recipe to give your family a healthy dose of Omega 3. These salmon cakes are great when served with this red pepper sauce.



Ingredients:

  • 3 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic, pressed
  • 3 tbsp red bell pepper, finely chopped
  • 3 green onions, finely chopped
  • 2 tbsp fresh ginger, finely chopped
  • 2 eggs, beaten
  • 1 tbsp cilantro, finely chopped
  • 2 tbsp fresh basil, finely chopped
  • 1/4 tsp cayenne pepper
  • 2 tbsp of Dijon mustard
  • 2 14 3/4 oz cans wild Alaskan sockeye red salmon, drained and skin removed
  • 1 1/4 cup breadcrumbs
  • 3/4 cup Parmesan cheese, grated
  • Red Pepper sauce:
  • 1 tbsp olive oil
  • 2 red peppers, chopped
  • 1/2 cup fresh basil leaves, washed and patted dry squeezed juice (3/4 to a whole lemon)
  • 3/4 cup mayonnaise
  • salt and pepper to taste

Method

Heat one tbsp olive oil in medium size skillet and saute green onion, red pepper and garlic for about 1 1/2 minutes. Cool and add basil, cilantro, beaten eggs, 3/4 cups bread crumbs, sockeye salmon and Dijon mustard. Mix together and mold into salmon patties. Combine rest of breadcrumbs (1/2 cup) with Parmesan cheese. Roll salmon patties in breadcrumb Parmesan cheese mixture. Chill at least one hour. Combine 2 tbsp olive oil and butter in a large frying pan. Cook salmon cakes over moderate heat for about 3-4 minutes each side until browned. Serve with red pepper sauce. Red Pepper sauce: Heat olive oil in pan over medium heat. Add red peppers and basil, stirring constantly. Saute for about 1 1/2 minutes. Put all of the ingredients in a blender and puree. Chill overnight.
