Oysters Rockefeller


Baked oysters on the halfshell with a savory breading that has a little spinach mixed in and topped with cheddar cheese.



Ingredients:

  • 12 oysters  
  • 2 Tblsp. finely chopped onion  
  • 2 Tlsp. finely chopped celery  
  • 2 Tblsp. snipped parsley  
  • 1/4 c. butter  
  • 1/2 c. chopped spinach
  • 1/3 c. dry bread crumbs  
  • 1/4 tsp. salt  
  • 7 drops red pepper sauce  
  • juice of 1/2 lemon  
  • shredded sharp cheddar cheese

Method

Cool & stir onion celery & parsley in butter until onion is tender. Mix in all ingredients except cheese and oysters. Sprinkle 1 Tblsp mix on each oyster, sprinkle with cheese Bake 400 degrees for 10 minutes.

Notes: I always double the recipe. Good also stuffed in mushrooms and baked.
