Pasta Pesto with Seafood

Make your own pesto with tomatoes, basil, and olive oil and add to cooked pasta and seafood.
Ingredients
- 1/2 lb Shrimp
- 1/4 lb Scallops
- 8oz container grape tomatoes
- 1 package fresh Basil
- olive oil
- 2 cloves garlic, minced
- 1/2 lb whole wheat thin spaghetti
- 1 chicken bouillon cube
- 1/4 lb Asparagus

Method
Peel and devein shrimp. Rinse cleaned shrimp & scallops under cool water. Rinse grape tomatoes and basil. Pull basil leaves away from stalk. Add grape tomatoes and basil leaves to blender; add about 2 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Cover and blend until tomatoes and basil are pureed. In a saucepan heat about 1 tablespoon olive oil add chopped garlic. Cook for 1 minute. Add shrimp and scallops then add pesto mixture to pan; cook on medium heat till shrimp and scallops are cooked. Take off heat and add lid to pot to maintain heat. Cook pasta according to package, adding bouillon granule to water and adding asparagus the last 7 minutes of cooking time. Once pasta is done, drain (save one cup of pasta water). Add pesto mixture and seafood mixture to pasta; mix well, adding enough of the reserved pasta water as necessary.
Notes: Serve meal with Warm italian bread and spring salad.
