Pesto and Shrimp Sandwiches

These pesto and shrimp sandwiches are served on baguettes and layered with onion, tomato and parsley. They're a great treat for a warm summer day.
 

Ingredients

  • 4 to 6 baguettes, cut in half horizontally
  • 1 cup purchased pesto
  • 1 8 oz. can tiny shrimp, drained
  • 1/2 large Vidalia onion, thinly sliced
  • 1 large red ripe tomato, thinly sliced
  • 1 cup finely chopped fresh parsley
  • 1 Tbsp. freshly ground black pepper (or to taste)

Method

In a small bowl mix pesto and shrimp then spread onto baguettes. Layer on onion, tomato and fresh parsley. Sprinkle on black pepper.

 

Notes: Good for really hot days.
