Po Man's Lobster Rolls

Chunks of cooked monkfish are used in place of lobster in a mayo-mustard mixture with seafood seasoning, celery and scallions that's spooned into toasted Kaiser rolls.
 

Ingredients

  • 4 kaiser rolls, split
  • 2 tablespoons (unsalted) butter, softened
  • 1 lb monkfish, cooked and cut into 1-inch pieces
  • 3 tablespoons mayonnaise
  • 1 teaspoon seafood seasoning
  • 1 teaspoon Dijon mustard
  • 1/4 cup chopped celery
  • 1/4 cup chopped scallions
  • 2 tablespoons chopped pimiento
  • Salt and black pepper to taste
  • Boston lettuce

Method

Spread cut sides of kaiser rolls with softened butter. Heat a griddle or heavy skillet over moderately high heat until hot. Toast buns, buttered sides only, until light brown. In a large bowl, combine monkfish, mayonnaise, seafood seasoning and Dijon. Toss to coat fish. Fold in celery, scallions and pimiento. Add salt and pepper. Serve on buns with lettuce.

 

Notes: A delicious alterative to the traditional lobster roll.
