Poached Salmon with Garlic Ginger Sauce

A nice garlic ginger sauce gives this otherwise plain salmon an Asian infusion that is unbeatable.
Ingredients
- 4 fillets of salmon
- 2 cloves of garlic
- 1 ginger root
- 1 cup of soy sauce
- 1/2 cup of teriyaki sauce
- 1/4 cup of brown sugar
- 1 lemon
- Salt to taste
- Pepper to taste
- 2 cups of vegetable stock seasoned

Lightly season the salmon with salt and pepper and a squeeze of lemon. Bring the vegetable stock to a simmer and place the salmon in the stock and let cook for about 8 to 10 minutes. Mince the garlic and ginger. Heat a saute pan and saute the garlic and ginger until lightly golden brown. Add the soy sauce and teriyaki sauce and cook until slightly thickened. Add the sugar and stir until the sugar is well incorporated. Take out the salmon and plate it. With a spoon, pour the sauce over the salmon. Serve lemon wedges on the side and enjoy.
Notes: This recipe should only take about 20 to 30 minutes to prepare. Salmon cooks very quickly when poached. Green beans, sweet potato or brown rice would be a great side dish.
