Potato Flake Scallops

These fresh scallops are hand battered in a beer and tempura batter then rolled in potato flakes and fried.
Ingredients
- 2 lbs scallops
- 1 cup tempura batter
- about 1/2 cup beer
- 2 cups potato flakes
- Old Bay seasoning to taste
- Salt and pepper to taste

Method
Mix beer and tempura batter together make as much batter regarding how many scallops you have to dip. Let it stand for at least 1/2 hour. Clean and dry scallops and sprinkle with salt, pepper and Old Bay seasoning. Dip scallops in tempora beer batter, shake off excess batter and roll in potato flakes. Deep fry the scallops until golden brown.
