Quick Salmon Kabobs


Salmon cubes are marinated in a mixture of bourbon, soy sauce, toasted sesame oil, garlic and ginger, skewered with Portobello mushrooms, red sweet pepper, red onion and zucchini, then grilled.



Ingredients:

  • Marinade/Sauce--
  • 1/3 cup soy sauce
  • 1/3 cup bourbon
  • 3 Tbsp brown sugar
  • 1/4 cup chopped fresh chives
  • 1 tsp toasted sesame oil
  • 4 cloves garlic, crushed
  • 2 Tbsp grated fresh ginger
  •                     
  • 1 1/4 lbs salmon steaks, cut into 1-inch pieces
  • 2 firm large portobellos, or 1 - 8 oz. pkg button portobello mushrooms
  • 1/2 red bell pepper
  • 1 red onion
  • 1 medium zucchini
  • 10 to 15 red and yellow cherry tomatoes
  • 2 Tbsp. olive oil
  • 1/2 to 3/4 tsp. kosher salt
  • 1/4 to 1/2 tsp. Black pepper
  • 2 Tbsp toasted sesame seeds

Method

Mix marinade ingredients. Reserve 1/2 cup. Combine salmon cubes and remaining marinade in a plastic bag; marinate in refrigerator for 30 min. Meanwhile, cut the large portobellos, bell pepper, onion, and zucchini into 3/4- to 1" pieces. Place in another plastic bag with olive oil and salt and pepper. Add tomatoes. Marinate for remainder of the 30 minutes. Preheat grill. Drain salmon and vegetables. Discard salmon marinade. Skewer vegetables and salmon alternately on skewers. Grill over medium-high heat for 5 minutes on one side, 3 to 4 minutes on the other, or until salmon is done. Baste with the 1/2 cup of reserved sauce. Sprinkle with sesame seeds. Serve immediately.
