Red Curry Shrimp

Got a yen for Oriental food? Try this savory dish with curried shrimp, peanut sauce and a citrus cucumber and onion salad.
Ingredients
- Shrimp:
- 2 lbs 26/30 shrimp
- 1/2 cup lime juice
- 1/2 cup red Thai curry paste
- Vegetable oil to coat pan
- Peanut sauce:
- 1/4 cup red onion, chopped
- 9 tablespoons lime juice
- 6 tablespoons Thai fish sauce
- 2 1/4 cup coconut milk
- 9 tablespoons peanut butter
- Cucumber salad:
- 9 tablespoons lime juice
- 1 seedless cucumber
- 3 tablespoons red onion, julienned
- 2 tablespoons Thai fish sauce

Shrimp: Peel and devein shrimp. Toss shrimp with lime juice and curry paste then place in refrigerator. When ready to cook, heat saute pan until hot, add oil. Sear shrimp very quickly on both sides. Peanut Sauce: Place onion, lime juice, fish sauce, coconut milk, and peanut butter in a food processor. Process until creamy and set aside. Cucumber salad: Slice cucumber on a mandoline, very thin. Julienne red onion. Make dressing by combining fish sauce and lime juice. Allow cucumbers and red onions to marinate in dressing. Blot dry cucumbers and red onions right before serving. Plating: Arrange salad and shrimp around peanut sauce on platter.
