Canned clams and rice are combined in a mixture with onion, tomatoes, parsley, white wine and chicken bouillon cubes.

6 cloves Garlic, chopped fine
½ tsp Crushed Red Pepper
2 Large Onions, chopped
2 oz (portuguese or Greek) Olive Oil
⅓ cup Parsley, chopped
3 Ripe Tomatoes, chopped
1 can Baby Clams
1 cup White Wine
2 cups Uncooked White Rice
4 cups Water
2 Chicken Bouillon Cubes


In large 3-qt pan, brown garlic, crushed red pepper, and onion in olive oil. Add parsley; cook about 1 minute. Add tomatoes; cook until soft, about 5 minutes. Add clams and liquid, wine and chicken bouillon and simmer for 5-10 minutes. Add water and rice, bring just to boiling. Cover pot and lower temp. Cook about 10-15 more minutes until liquid is absorbed. Let stand 5 minutes before serving.
