Rick's Obscenely Rich White Clam Sauce with Pasta


A fantastic pasta with a rich and flavorful clam cream sauce that definitely be a hit. Try it with different styles of pasta for a variety of texture.



Ingredients:

  • 2 tsp butter  
  • 1 C finely chopped onion  
  • 1/2 C dry white wine  
  • 1 tbsp minced garlic  
  • Two 6.5 oz cans chopped clams, undrained  
  • Two 10-oz cans whole clams, undrained
  • 1 tsp ground white pepper  
  • Salt to taste  
  • 1/2 C chopped parsley  
  • One 8-oz package cream cheese  
  • 1 lb. linguine or other pasta  
  • 2 tbsp butter or olive oil  
  • Parmesan cheese  
  • Freshly ground black pepper

Method

In large nonstick skillet or Dutch oven, melt 2 tsp butter over medium-high heat. Add onion and cook, stirring constantly, until they begin to become transparent (5 to 7 min.) Add white wine, garlic, chopped and whole clams and their juice, white pepper, salt, and parsley. Bring to boil; reduce heat to low and allow to simmer. Add cream cheese and stir into the sauce as it melts. Cook pasta to 'al dente', drain. While pasta is hot, toss with butter or olive oil. Top with sauce and serve at once with Parmesan cheese and black pepper to taste. Serve with salad and garlic bread.
