
A quick saute in olive oil and an easy pan sauce of rosemary and white or red wine vinegar is all it takes to prepare this healthy seafood meal.
Coat a medium fish filet with plain flour, dust the excess flour off, and fry in one cup olive oil over medium heat. Flip fish when lightly browned and cook other side for 5 minutes. Remove fish from pan when done on both sides and place on a plate. Remove skillet from burner and add rosemary. After rosemary has softened, add 1/2 cup vinegar and stir together with rosemary; and pour over the fish. Sprinkle with a little salt and dinner is ready.
Notes:
Do not attempt to pour vinegar in the pan with the stove on, it may catch fire as it is extremely flammable.
