Royal Road Salad


This pasta salad has a touch of color and interest from the red bell pepper, black olives, green chilies, and shrimp. Sea scallops, fusilli, and jicama are also here, plus cilantro, olive oil and a little wine.



Ingredients:

  • 1/2 lb. shrimp, shelled & deveined
  • 1/2 lb. sea scallops, halved
  • 1 1/2 tsp. dry white wine
  • 1/2 cup olive oil
  • 1-2 dashes of Tabasco sauce
  • 1 tsp. chopped fresh cilantro
  • 1 (4 oz.) can of chopped green chilies
  • 1 package fusilli pasta, cooked & drained
  • 1 cup diced jicama
  • 1/2 cup diced red bell pepper
  • 1/2 cup sliced black olives

Method

Boil shrimp till they turn pink. Boil scallops till they turn opaque. Cool shrimp & scallops. Whisk together wine, olive oil, Tabasco, cilantro & chopped green chilies. Toss together with pasta, seafood, jicama & red bell peppers. Garnish with black olives.
