Salmon en Croute

With a pre-packaged pie crust and hollandaise sauce, this elegant salmon dish is a snap to make.
Ingredients
- 1 pound salmon fillet
- 1 ready made pie crust
- 1 onion, sliced
- 4 tablespoons olive oil
- 1/4 cup tomato pesto
- Juice 1/2 lemon
- 1 pkg hollandaise sauce mix
- Salt and pepper to taste

Method
Wash salmon and place on paper towel to dry. Fold out one piecrust and lay on a baking sheet. Place dry salmon fillet on top. Lightly season with salt and pepper, then spread pesto over top. In a small saucepan, saute onion in olive oil until onion is brown, or caramelized. Salt and pepper lightly, then spread over pesto mixture. Unwrap second piecrust and lay it on top of fish; crimp around edges to seal, trimming off extra piecrust. Bake in a 350 degree oven for approximately 20 minutes, or until crust is golden. Prepare hollandaise sauce. To serve, pour sauce over each slice of fish.
Notes: A larger fillet may be used--cooking time may vary depending on thickness of fish.
