If you are looking for a way to spice up dinner, replace that old meatloaf with a salmon loaf. There are few ingredients and the dish is simple even for a week night.

In food processor, place salmon with juices. Add eggs, sugar and depending on consistency, add bread crumbs slowly. Consistency needs to be thick to shape into a loaf so you may need to add more bread crumbs. Pour salmon into loaf pan and shape into a meatloaf shape. Pour bread crumbs over top. Bake at 350 for 1 hour. Let cool.
Corn flake crumbs can be substituted for bread crumbs.
