Salmon Pesto Scramble

This combination of pesto, salmon, and eggs would be a great main dish or a choice in a brunch buffet.
Ingredients
- 8 large eggs
- 1/4 cup water
- 2 tablespoons butter
- 1/2 tsp salt
- 1/2 tsp pepper
- 1&1/2 cups precooked salmon fillet, cut into chunks
- 2/3 cup prepared pesto
- 4 oz goat cheese, crumbled

Method
1. Beat eggs and water with whisk until well mixed and foamy. Add salt and pepper. 2. In a large non-stick frying pan melt butter over medium heat. 3. Add the eggs and cook over medium heat, moving eggs around gently with a heat proof spatula. 4. When eggs are almost set, add the salmon and and pesto and gently mix throughout the eggs. 5. When heated through, about 1 minute, add the goat cheese and remove to a serving platter making sure the salmon, pesto and goat cheese is evenly distributed
Notes: Cooking at medium heat will prevent the eggs from getting overcooked. The consistency should be a soft scramble.
