Salmon with Cilantro-Mint Rice and Feta


Feta, mint and cilantro all combine very nicely to compliment these salmon filets. This is a nice and light summer dish.



Ingredients:

  • 4-4oz salmon filets
  • 2 tbsp lemon juice (divided)
  • 2 tbsp and a drizzle extra virgin olive oil
  • 3/4 cup diced yellow or white onion
  • 3 cups short-grain brown rice-cooked
  • 2 cloves garlic, finely chopped
  • 1 tbsp fresh mint-chopped
  • 2 tbsp fresh cilantro-chopped
  • 1/2 to 1 cup crumbled feta cheese (1/8 to 1/4 cup per serving, depending on preference)

Method

Preheat oven to 425 degrees. With salmon on a baking sheet (9x13 or similar), drizzle a small amount of extra virgin olive oil and 1 tbsp of lemon juice over salmon. Bake salmon filets 10-12 minutes until cooked through and flake easily. While salmon is baking, in a sauce or stock pot that will hold at least 6 cups, add 2 tbsp of olive oil and the onion. Saute the onion over medium heat until just starting to soften (3-5 minutes). Then add the cooked rice, garlic, mint, cilantro and remaining lemon juice. Cook over medium heat stirring frequently until the mixture is heated through. Serve each portion alone with the salmon fillet atop the rice mixture. Finish off by crumbling feta over each dish, garnish with a small sprig of cilantro or mint if desired.
