Saucy Sweet Salmon

Spinach and mango make this salmon saucy and sweet. A quick and healthy dinner is only 25 minutes away.
 

Ingredients

  • 10 oz fillet of salmon cut into two thick wedges
  • 1 jar of mango salsa
  • Large ripe mango, pitted and sliced
  • Bag of ready prepared baby spinach leaves
  • 1 oz butter (optional)
  • Pinch black pepper
  • Pinch nutmeg

Method

In a heatproof oven dish place a bottom layer of the ready prepared spinach leaves. Melt the butter and sprinkle in the ground nutmeg and black pepper. Pour over the spinach. Top with the two salmon fillets. Layer a few thin slivers of mango and spoon a thick layer of the mango salsa. Cover with foil. Bake in over for 25 minutes at 400 degrees.

 

Notes: Serve with a simple rice or couscous and a salad of mixed bell peppers.
